Why you’ll love it

Markets, mezcal, and grandmothers who out-cook every chef. A GoSmart specialist tailors the route, the stays, and the pace to you.

Why it works

Steam rises off a clay comal in the market, the air thick with chocolate, chiles, and woodsmoke, and a vendor waves you over to taste a mole so complex it runs to dozens of ingredients. Oaxaca is a heartland of Mexican cooking, and it feeds you constantly.

Worth knowing

The seven moles are the headline, but the real education is the markets and the mezcal: small-batch, smoky, sipped not shot, from the agave hills around the city. A cooking class or a market tour makes sense of it all.
Base yourself in the walkable centro and day-trip to the mezcal palenques and villages like Teotitlan for weaving and Mitla for ruins. Come hungry and pace the mezcal, since it is stronger and more sippable than it seems.
Dia de Muertos in late October and early November is extraordinary here, and also the busiest and priciest, so book far ahead for those dates. The rest of the year is warm, calmer, and just as delicious.
